Buttermilk Pancakes

 Omg! I am back. I took a little hiatus from blogging but,  I am back and ready to share some recipes and chitchat. It’s been an interesting 2022, so far for me and my clan. But, we keep going because that is what we do. I hope your 2022 has been filled with joy, adventure and most of all good FOOD. 

Let’s talk pancakes. I’m sure most people are familiar with the pre-made just add water boxes. Hey if that’s what you like I am not judging. I too have used the pre made pancake mix. I usually add an egg to it. But, if you don’t get that water to batter ratio correct, you get thin flat pancakes or, dense over beaten pancakes. Or, you find yourself in the never ending spiral of, adding more water, or, more batter to get the right consistency, lol. Well making homemade from scratch pancakes is not hard nor time consuming. Most of the ingredients you already have on hand, in the fridge and pantry.

Pancakes, unlike a lot of dishes can be made all year round, for breakfast lunch and even dinner. It’s always pancake season!! This is an opportunity for you and you family or friends to cook together. This is a kid friendly recipe. The buttery flavor and perfect fluffiness of the pancakes will have people thinking you really worked hard in the kitchen, lol. 


Buttermilk Pancakes


Some tips to ensure you get yummy fluffy pancakes every time

Room Temperature Buttermilk is always best, but, let’s be honest, that is not always the case. If I wake up and and decide I am making pancakes, there is no way I am waiting an hour or so for my buttermilk to get to room temperature. Not going to happen, I will have eaten something else by then, lol. You can use cold buttermilk. If you don’t have buttermilk you can make a buttermilk substitute using milk and vinegar. You can also use regular milk to make pancakes, but that is not these pancakes! Stay focused, lol!

Melt Butter, ahead of time so it is not hot when you add it to the egg mixture. If it is too hot, the eggs will cook. 

Lumps!!! LUMPS ARE OKAY! Lumps add to the fluffiness of the pancakes and are okay. If you over-mix the pancakes trying to get smooth batter, your pancakes will be dense and FLAT! DO NOT OVER-MIX, OR BEAT, your pancakes!! Especially if you are telling folks you got this recipe from me, lol. Sifting the dry ingredients into a bowl first helps with lumps

After combining ingredients, MIX LIGHTLY!!

LET THE BATTER SIT FOR ATLEAST 10 mins! This is the perfect opportunity to be prepping or working on the other components of the meal. Such as, coffee, or your protein, and fruit, etc. 




Ingredients 

2 cups Flour
3 Tbsp Sugar
2 tsp Baking Powder 
1/2 tsp Baking Soda 
1/2 tsp Salt
2 Lrg Beaten Eggs 
2 1/4 cup Buttermilk (room temp if possible)
1 tsp Vanilla Flavor
3 Tbsp Melted Butter

STEP ONE: Melt butter, set aside. 

STEP TWO: Add dry ingredients to a large bowl. Set aside.

STEP THREE: In another bowl mix, milk, beaten eggs, and vanilla. Pour in the melted butter. 

STEP FOUR: Make a well or hole in the dry ingredients. Combine the wet and dry, by pouring the wet mixture into the bowl of dry mixture. Lightly mix just to combine them. Lumpy is ok, but make sure mixture is combined.

STEP FIVE: Let stand for 10 minutes.

STEP SIX: Use an ice cream scoop or cup to pour desired batter into a pre buttered pan. Cook on a low heat temperature, until bubbles form and the edges brown then flip the pancake. About 3 mins on each side. Serve warm with your favorite fruit or toppings.
