Me, Youtube, and Lasagna Soup!

 Hi there! 

It is cold as ice outside! What better season for soup. Before I started posting to social media consistently, I posted a Lasagna Soup video to YouTube. I knew I wanted to share my recipes, and I just knew people would be so interested in what I shared. I mean why wouldn’t they be, I truly can make delicious food…WRONG!! Lol. The video got about 45 views, and went no where. πŸ˜‚

At the time, I had watched 100’s of videos with, people cooking and cleaning. I could do this thing. I do both on a regular basis, why not record myself. Baby! The hard work, dedication and patience that goes into filming, editing and reposting. I was not prepared, nor, ready for what that actually meant. Filming is, lengthy. Getting the right camera angles, and the right shot, is important. Editing also, takes up quite some time. It took hours, splicing all the shots together, adding cool transitions and then music. Then there’s voiceover! I record, erase, record erase.. too blah, too overzealous, not the right pitch etc. Nevertheless, I posted my soup video, for which I was proud and felt accomplished, because, I had worked so hard on that video. 

Lasagna Soup, deconstructed lasagna, whatever you wanna call it.  Warm, hearty and filling. I saw a recipe in a cookbook, and was like,  I could tweak this and it is going to be DELICIOUS! Let’s do this thang! When I told my family what I was going to make, they looked at me side-eyed and said, “What the heck is that?!” As I was preparing the soup, they each took turns coming to investigate if this was some hair brained scheme, that would end in them ordering take-out, or a legitimate meal they would enjoy. My daughter kept saying, “ I don’t know about this, mom”, lol. In the end, they all had second helpings. They loved it so much, they didn’t mind the leftovers next day. Btw, next day this soup is even better! 

Now, I see different variations of Lasagna Soup everywhere. I am posting my recipe below, feel free to make it your own. I would love to hear, what you did differently, and how it turned out for you.

Tip: I used ready made, lasagna noodles. It saves time, and the noodles never got soggy. Just break them up and add at the end

Tip: I used the crock-pot, but, you can make the soup on the stove, as well

Remember, I am not good with measurements, unless I am baking. I simply eye-ball, and taste, when I season my food. I promise I am trying to get better.

Lasagna Soup 

Ingredients

1 lbs. ground turkey

1 medium onion, diced 

1 1/2 carton low sodium chicken broth

15 oz can tomato sauce 

15 oz can diced tomatoes 

Coarsely Chopped, multicolored bell-pepper

1 bag frozen squash 

Carton ready made lasagna noodles 

Cup or so of fresh spinach 

Ricotta cheese, for topping

Fresh grated Parmesan 

Fresh basil

Minced Garlic 

About 2 tbsp Basil pesto

Salt 

Pepper

Garlic Powder

Italian seasoning


Step One: Brown the meat, add in onion, and sprinkle with salt pepper, garlic powder, and Italian seasoning. If you use ground beef, be sure to drain it.

Step Two: Add to crock pot. Pour in chicken broth. Add in Squash, tomato sauce, diced tomato, and bell pepper. Stir. Season with, Italian seasoning, minced garlic and salt and pepper. (Note: do not over season, start small and taste as you go) add in fresh basil, 2-3 leaves. 

Step Three:Cook for 4 hrs on high setting or 8 hours on low

Step Four: 15-20 mins before soup is done, stir in Lasagna Noodles

Step Five: stir in basil pesto, when the soup is done. Add in fresh spinach and let wilt.

Serve, topped with ricotta cheese, Parmesan and basil garnish, with breadsticks. 


Currently, I am editing and getting videos together for my YouTube channel. Also, overhauling the look and feel of my channel. I have grown in the last year, I have learned so much, and my confidence, which had been wavered by my lack of viewers, lol, has been mended.
