Delicious EASY Tri-Color Chicken Soup

 Chicken soup is probably one of my favorites to make. You can do a slow cooker version, or on top of the stove. The version we will make today is probably the quickest, and it is very budget friendly. Altogether I spent about $10. It was a long day at work and I wanted some chicken soup.

I purchased a bag of skinless frozen chicken thighs. You can use fresh if you prefer. Also, tip: for frozen chicken, cover in a pot of water, with some diced onion, salt pepper, garlic powder and let it boil for about 15 mins, the chicken will thaw and you made chicken broth

It is the best go to recipe to make and you still have time to enjoy your day or evening. Kids love it and you can add ingredients that your family will like. I love a versatile recipe. It can be made many ways and still be delicious and it’s not the same boring meal each time. 

This is done in about an hour, serve with cornbread and Voila! The recipe below will serve a large family. Scale back if you have a smaller family or will be making this just for yourself.




Tri-Color Chicken Noodle Soup


Ingredients:

1 box Tri-Color noodles
1 bag frozen boneless skinless chicken thighs
1 bag baby carrots
1 large Onion coarsely chopped 
6-7 celery stalks cleaned and chopped 
Sliced Mushrooms (optional)
32 oz. Chicken broth
About 8-10 cups of water (this is a guesstimate) 
Salt
Coarse pepper 
Celery seasoning
Garlic powder 
Onion powder 
Paprika 
Seasoned Salt
2 Bay leaves
Bouillon chicken 
Can of cream of chicken soup

Step One: Add the frozen chicken to a stockpot or large deep pot. Cover it with water. Dice an onion or use half of the coarsely chopped onion. Season with salt, pepper, garlic powder, onion powder, celery seasoning, seasoned salt, and paprika. Cook on med heat until boiling. Continue to cook until the chicken has gotten soft, about 15-20 mins.

Step Two: turn down the heat. Add the carrots, celery and remaining onion, bouillon, chicken broth and bay leaves. Stir. Continue to cook on medium heat for about 10 mins. Stir and add in the pasta and mushrooms. Cook for five mor minutes. 

Step Three: Stir in cream of chicken soup. Continue to cook until the pasta becomes Al dente.

Feel free to add or substitute for veggies your family likes, like spinach, squash etc. Serve with cornbread or bread of your choice.
